Pure Engineering Group’s project at Waterford Institute of Technology centres on kitchen extraction within a campus catering facility. A substantial stainless steel canopy extends above the main cooking line, providing overhead coverage across several cooking stations behind the food service counter.
The installation sits within a bright, open catering environment connecting food preparation, service and communal dining. Its stainless steel finish complements the surrounding kitchen equipment, while ceiling ventilation grilles are incorporated into the suspended ceiling above the catering area.
The scope of works included:
Extraction Canopy Above the Cooking Line
The kitchen features a continuous stainless steel canopy above the ovens, range, grill and frying equipment. Its length follows the cooking line, providing a collection point for cooking fumes, steam and heat close to the equipment beneath it.
This arrangement accommodates multiple cooking processes within one shared extraction zone. Positioned overhead, the canopy leaves the floor area available for preparation tables, equipment access and staff movement.
Removable Baffle Filtration
Banks of baffle filters sit along the underside of the canopy to help separate grease droplets from the extracted air. The filter arrangement follows the cooking equipment across the working line.
Removable filters provide access for routine cleaning, an essential consideration wherever frying and grilling take place. The stainless steel canopy also provides a durable, wipeable surface around the extraction area.
Ceiling Ventilation Within the Catering Space
Square ventilation grilles are integrated into the suspended ceiling above the kitchen and service area. Their position accommodates air distribution alongside the ceiling lighting and other building services.
Considering room ventilation alongside cooking extraction helps address the different airflow requirements within a catering facility. The ceiling arrangement keeps these components above the working area without occupying preparation or serving space.
Kitchen Extraction Within an Open Catering Layout
The cooking line sits directly behind the food service counter, with the wider dining area beyond. This makes the canopy a visible part of the catering environment as well as a functional kitchen component.
The installation illustrates the relationship between extraction coverage and equipment layout. Its continuous form follows the cooking line while maintaining a consistent stainless steel finish across the kitchen backdrop.
