The Village Hotel,

Pure Engineering Group’s project at The Village Hotel in Bettystown centres on commercial kitchen extraction above a substantial island cooking line. The stainless steel canopy arrangement extends over cooking equipment on both sides of the island, bringing extraction directly above the kitchen’s main sources of cooking fumes, steam and heat.

The installation combines overhead extraction, removable baffle filters, integrated lighting and ventilation grilles within one coordinated canopy arrangement. Its position accommodates the central cooking equipment while leaving access around the island for preparation, cooking and service.

The scope of works included:

  • Stainless steel island extraction canopy serving the central cooking line.
  • Removable stainless steel baffle filters.
  • Integrated lighting above the cooking equipment.
  • Ventilation grilles incorporated into the canopy assembly.

Island Extraction Above the Cooking Line

The kitchen features a large stainless steel island canopy extending above the central cooking equipment, including ranges, fryers and grills. Extraction coverage runs along both sides of the cooking island, following the equipment arrangement beneath it.

An island configuration allows staff to work around the cooking line while positioning extraction overhead. This makes the canopy an integral part of the kitchen layout, accommodating multiple cooking stations within a shared working area.

Removable Baffle Filtration

Banks of stainless steel baffle filters line the canopy above the cooking equipment. These filters help separate grease droplets from the extracted air before it enters the downstream extraction system.

The filter panels feature handles for removal, providing access for routine cleaning. Keeping these components accessible is a practical consideration for hotel kitchens where frying and grilling form part of daily food preparation.

Integrated Canopy Lighting

Lighting is incorporated into the canopy along the cooking line, providing direct illumination above the equipment. The fittings sit within the stainless steel assembly, keeping the lighting close to the areas where chefs are working.

This arrangement supplements the room’s general lighting and helps illuminate cooking surfaces beneath the canopy, where the overhead structure could otherwise create shadows.

Ventilation Grilles Within the Canopy Assembly

Rectangular ventilation grilles are incorporated into the canopy’s outer faces and underside. These bring air distribution points into the same overhead assembly as the extraction and lighting.

Combining these features within the canopy keeps the installation compact and coordinated around the cooking island. It also allows ventilation components to be accommodated above the working area without taking up preparation or circulation space.
