Pálás Cinema

Pure Engineering Group’s involvement at Pálás Cinema in Galway combines kitchen ventilation with a later catering equipment installation brief. The cinema’s restaurant kitchen features a Pure Vent stainless steel extraction canopy above the cooking line, incorporating baffle filtration, integrated lighting and air distribution outlets.

A subsequent equipment upgrade was planned around replacing the existing convection oven with a Unox combi oven. The installation brief brought together equipment handling, a new water supply, checks to existing drainage and final connections within the compact kitchen.

The scope covered:

  • Stainless steel kitchen extraction canopy with removable baffle filters.
  • Integrated canopy lighting and air distribution outlets.
  • Planned removal of the existing convection oven and installation of a Unox combi oven.
  • New oven water supply and assessment of existing waste pipework.
  • Temporary removal and reinstatement of pass shelving to provide equipment access

Kitchen Extraction Above the Cooking Line

A Pure Vent stainless steel canopy extends above the kitchen’s range, grill and oven area. Its position provides a collection point for cooking fumes, steam and heat generated by the equipment below.

Removable stainless steel baffle filters sit within the canopy to help separate grease from the extracted air. Handles on the filter panels provide access for removal and routine cleaning.

Integrated Lighting and Air Distribution

The canopy incorporates lighting directly above the cooking equipment, supplementing the kitchen’s general lighting. A front ventilation grille and a series of circular outlets are integrated into the stainless steel assembly.

Bringing these features together accommodates extraction, illumination and air distribution within the available overhead space. This is particularly relevant in a compact kitchen where equipment, storage and working routes sit close together.

Planned Combi Oven Replacement

The later installation brief specified disconnecting the existing convection oven and moving it, together with its stand, out of the kitchen over the service pass. Delivery of the replacement Unox combi oven was to be coordinated with collection of the old unit.

The replacement oven and stand were then to be brought into the kitchen, positioned, levelled and connected, with commissioning included in the planned scope.

Water Supply and Drainage Checks

The combi oven installation required a new water supply and a check of the existing waste pipework for suitability. These service requirements formed part of the preparation for connecting the replacement equipment.

Assessing the available connections alongside the equipment change helps identify the adaptations needed within an existing kitchen.

Access Through the Service Pass

The installation sequence included temporarily taking down the two-tier wall shelf at the pass so the ovens and stands could be moved through the opening. Reinstatement of the shelf was included as the final step.

Planning this access route allowed the equipment replacement to be considered around the existing kitchen arrangement, including the shelving and service counter.
