Based in Dublin, they entrusted Pure Engineering Group to support their requirement for an unconventional food manufacturing facility that combined precision temperature control with ultra-hygienic food preparation areas to maintain their industry-leading freshness standards. The project involved:

Mechanical Heat recovery ventilation

  • A positive ventilated production area ensures clean, filtered air, preventing external contaminants from entering the food preparation spaces.

General ventilation 

  • Positive pressure ventilation design is integrated across production areas to enhance indoor air quality and hygiene.

Fire smoke dampers

  • Supply and installation of fire/smoke dampers integrated into the ventilation system to ensure enhanced safety and fire compliance

Mechanical MCC controls

  • Installation of 2kW electronic radiators, electrical control, MCC panel controls

HVAC smart controls- automated energy reporting

  • Installation of centralised controls for complete, efficient management of the VRF system across all floors

  • Plumbing installation covering all boiler room requirements and full sanitary provisions  
  • Supply and installation of equipment for the boiler room: gas boiler, clarifier, pumps, booster set flues, pressurisation unit, controllers, pipework, and lagging
  • Commercial plumbing services: installation of soils and wastes
  • Supply and installation of cold-water supply (CWS), hot water supply (HWS), hot water return (HWSR), and mains water supply (MWS)
  • Grease trap plumbing
  • Flushing out and chlorination of storage tanks and lines

Gas services and associated controls

UVC Kitchen extract system

  • High-efficiency UVC technology integrated into the kitchen extract system, sterilising and removing odours and grease to discharge cleaner, safer air
  • Reduces grease build-up inside ductwork, significantly lowering fire risk
  • UVC light actively destroys bacteria, viruses, and odours in the exhaust air
  • Integrated with stainless steel canopy extract hoods and ducting, reducing the need for frequent manual cleaning and improving fire safety by eliminating grease build-up at the source
  • Complete installation includes UVC lamp modules, power supply units, control interface, and safety interlocks, ensuring compliance with hygiene and environmental regulations in commercial kitchens.

Bespoke Kitchen canopies with integrated controls

  • Installation of bespoke kitchen canopies equipped with control and automation systems
  • Fan speeds automatically adjust based on real-time cooking activity.
  • Built-in alert system for operational changes or malfunctions
  • Automatic pressure balancing to maintain safe and efficient kitchen airflow
  • Custom-designed kitchen extraction system created to control odour and grease, preventing contamination and maintaining air quality standards

  • Positive air pressure systems ensure clean, HEPA-filtered fresh air and support hygiene in food production areas.

Fresh air factorisation with HEPA 

  • Positive ventilated production area using HEPA-filtered air to protect against external contamination

Remote/ centralised Refrigeration cold rooms

  • Unique design and commissioning of five bespoke cold rooms, each serving a specific Sushi prep station
  • Glycol solution maintains sub-zero temperatures in cold rooms without freezing product integrity.

Clean rooms

  • Clean, hygienic, good production environments created with filtered, positive-pressure air systems to maintain ultra-fresh conditions

Custom Design of the above systems

  • All mechanical and ventilation systems were custom-designed to meet the ultra-high standards of food safety, hygiene, and precision temperature control required for freshly packaged sushi production.
  • First in Ireland, a Vacuum Black Chiller was installed using rapid cooling technology to extend shelf life while preventing bacterial growth.
