Perched high above the city, the restaurant is renowned for its elevated rooftop experience, effortless luxury and panoramic skyline views, setting a benchmark for quality that extends throughout every aspect of the venue.

Pure Vent:

  • Bespoke Capture Vent extract/fresh air island canopy: A custom-designed Capture Vent ventilation canopy installed above the central cooking island, engineered to efficiently remove heat, steam, grease and airborne contaminants while simultaneously introducing controlled fresh air back into the kitchen environment. The system is tailored to the exact layout and cooking equipment beneath it, improving air quality, maintaining comfortable working temperatures and supporting full compliance with commercial kitchen ventilation and hygiene standards.
  • Service distribution unit: A purpose-built Service Distribution Unit providing a centralised and organised hub for essential kitchen services such as electrical power, gas supply, data connections and isolation points. The unit ensures safe, efficient and easily maintainable access to all operational utilities, reducing clutter, improving workflow and enabling streamlined maintenance without disrupting kitchen operations.

Pure Mechanical:

  • Bespoke cold rooms including remote refrigeration and controls: Custom-built cold storage rooms designed specifically to suit the kitchen’s spatial layout and operational requirements, providing reliable temperature-controlled environments for the safe storage of fresh and frozen produce. The systems incorporate a remote refrigeration plant located away from the kitchen area to reduce noise, heat output and visual impact, while integrated digital control panels allow precise temperature monitoring, adjustment and alarm functions. This setup ensures optimal food preservation, energy efficiency and full compliance with commercial food safety and hygiene regulations.
