Camile Thai, Greystones

Pure Engineering Group delivered the kitchen ventilation package for Camile Thai in Greystones, bringing together a stainless steel extraction canopy, kitchen extract and incoming air supply. Installed above the restaurant’s wok cooking line, the canopy forms a practical part of the open kitchen, which is visible from the customer ordering area.

The installation combines filtered extraction, integrated canopy lighting and coordinated fan speed controls to support the demands of a busy commercial kitchen.

The scope of works included:

  • Stainless steel kitchen extraction canopy above the cooking line.
  • Baffle filters and integrated canopy lighting.
  • Kitchen extraction system.
  • Incoming air supply serving the kitchen.
  • Two inverter speed controls linked to one shared control.

Stainless Steel Kitchen Extraction Canopy

A stainless steel extraction canopy was installed above the cooking line, covering the wok stations and adjacent cooking equipment. Positioned directly over the equipment, it provides a collection point for cooking fumes, steam and heat.

The canopy sits within an open kitchen arrangement, bringing a consistent stainless steel finish to an area visible from the restaurant’s customer counter.

Baffle Filters and Integrated Lighting

The canopy incorporates a bank of stainless steel baffle filters and integrated lighting above the cooking equipment. The filters help separate grease from the extracted air, while the lighting illuminates the working area beneath the canopy.

Removable filter panels provide access for routine cleaning, an essential consideration for a kitchen with regular wok cooking.

Kitchen Extraction System

Kitchen extraction formed part of the ventilation package, drawing air from the canopy and carrying it away from the cooking area.

Positioning the canopy over the cooking line allows extraction to address fumes and heat close to their source, supporting the day-to-day operation of the commercial kitchen.

Incoming Air Supply

The package also included incoming air to the kitchen, working alongside the extract system to replace air removed during cooking.

Considering air supply and extraction together helps manage airflow through the kitchen, particularly where the cooking area connects directly with customer-facing spaces.

Coordinated Fan Speed Controls

The kitchen extract and incoming air systems were arranged with two inverter speed controls linked to one shared control. This allows both systems to be adjusted from a single operating point.

The arrangement gives the kitchen team a straightforward way to adjust ventilation speeds as cooking activity changes throughout service.
